Published with permission by Santa Clara County Sheriff's Office Food Services Training - 1 Santa Clara County Sheriff's Office Custody Manual Food Services Training 901.1 PURPOSE AND SCOPE The purpose of this policy is to reduce the risk of potential injury to Food Services staff, contractors, and incarcerated person workers in the Food Services areas by developing and implementing a comprehensive training program in the use of equipment and safety procedures. 901.2 POLICY The Santa Clara County Sheriff's Office ensures a safe and sanitary environment is maintained for the storage and preparation of meals through the appropriate training of Food Services staff and incarcerated Food Services workers (15 CCR 1230; 15 CCR 1243( g); 15 CCR 1245(a)). 901.3 TRAINING The Food Services management staff, under the direction of the Division Commander, is responsible for planning and implementing the organizational structure of the Food Services Operation. The Food Services management staff shall ensure a training curriculum is developed and implemented for the use of equipment and safety procedures for all Food Services personnel, including staff, contractors, and incarcerated Food Services workers. The training shall include, at minimum: (a) Work safety practices and use of safety equipment. (b) Sanitation in the facility Food Services areas. (c) Reducing risks associated with operating machinery. (d) Proper use of chemicals in Food Services areas. (e) Employing safe practices. (f) Use of personal protective equipment. (g) Facility emergency procedures. The Food Services management staff, at the direction of the Division Commander, shall ensure all staff and incarcerated Food Services workers are trained on how to assemble, operate, clean, and sanitize kitchen equipment they are authorized to use. Information about the operation, cleaning, and care of equipment, including manufacturer's literature, that is suitable for use as reference material shall be kept in the Food Services operation area. The reference material should be used in developing training on the use of the equipment and the maintenance and cleaning procedures. Only trained personnel are authorized to use Food Services equipment. Food Service management staff shall identify and maintain a master list of all food service equipment that incarcerated persons are authorized to operate (e.g. prethermalization equipment at housing units, etc.) Policy 901 Docusign Envelope ID: FE15BC3F-5665-401D-A123-86EE326E56CB Copyright Lexipol, LLC 2025/0 1/13, All Rights Reserved. Placement and installation of equipment must be carefully planned to facilitate cleaning, sanitizing, service and repairs. 901.4 BRIEFING TRAINING The Food Services management staff should consider daily briefing training as a method of staff development. A lesson plan and record of attendance should be incorporated into the briefing training.
